I was recently introduced to zucchini noodles and I instantly fell in love with them! They are healthy, delicious, and a little bit crunchy. They go great with any pasta sauce and they are so easy to make. I got a zoodle maker (you can also buy some that are already made at the grocery store) which was a lot of fun to use and surprisingly easy. I bought some zucchini and used them in the zoodle maker, which acts similar to a cheese grater and creates perfect little zucchini noodles.


Next I made an easy red pasta sauce with crushed tomatoes, tomato paste, olive oil, garlic, red pepper flakes and salt and pepper. I simmered it for a while so all the flavors could come together and then added some shrimp to cook in the sauce. Once the sauce and shrimp were finished, I added the zoodles to the pan with the it to warm them up and let the sauce soak into them a bit.
Finally, I plated the dish, added a bit of parmesan cheese to the top, and some bakery bread on the side. This is such an easy and healthy meal to make at home! Its delicious and everyone should be tasting this noodle substitute.
